I mean sure, you could buy the pre-bagged broccoli slaw stuff from the supermarket, but if you’ve got the time and inclination, it’s certainly much cheaper just to do it yourself. It’s pretty easy! Plus, it’s super customizable, so you can make yours into whatever you like!

But anyway, here’s a good start:

The Goods:

Broccoli, shredded (You can do this with the shredding disc if you have a food processor, or just go hog wild on it with a knife until it’s in little pieces.  Don’t want it so fine? Cool, cut it into whatever you would consider “bite-sized” and it’ll still be great!  Hey, by the way? The stems shred beautifully.  Don’t forget them, they’re tasty too!)

Onion, thinly sliced

Raisins (or dried cranberries or any other dried fruit you might like.)

Oil (I like extra virgin olive oil, but you can totally use whatever you like)

Vinegar (I used apple cider vinegar)

Sugar

Salt, Pepper

The method:

Honestly? Once you’ve got your broccoli and whatever cut up, just mix everything together.

Alternatives:

Hate onions? Cool, leave them out.

Want crunchies? This would be amazing with slivered toasted almonds or other toasted nuts.

Want creamy? Do a mix of mayo, vinegar or lemon juice, sugar, salt and pepper (Gosh, that’s basically cole slaw dressing!)

Want color? Add in some shredded carrot or thinly sliced bell pepper

Want more sweet but not sugar? Add some sliced apples!

Want more Asian-Fusion? Make the dressing from sesame oil, rice wine vinegar (Mirin), sugar, and a dash of soy sauce.

Does eating that much raw broccoli give you the heebie jeebies? You can totally lightly blanch the broccoli, chill it, and then make it into salad/slaw.
