So … that might be a bit of an exaggeration.  But the house is always pretty happy when I declare it a taco or chili night, because that usually means that I’ll be making salsa. It’s a wicked easy recipe full of fresh, bright flavors that can totally chase away any winter-related doldrums.

The Goods:

vine ripe or hothouse tomatoes, cored and cut into wedges

garlic, peeled cloves

onion, peeled and cut into wedges

cilantro

lemon or lime juice

salt

pepper

jalapeno, stem removed (and seeds and ribs removed if you want flavor but not as much of the heat)

You will need a food processor or a blender.

The method:

uh… put everything in the food processor and push the button.  You may need to pause and scrape down the sides. But really, that’s pretty much it.  Whiz away, and adjust the flavor.  If you want extra velvety mouthfeel, drizzle and stir in just a little touch of extra virgin olive oil right at the end, but it’s not even necessary.

Great? Great.  Pass the chips, please!
