It’s quite amazing what one can come up with even when lacking in motivation.

This is in no way original, amazing, or fancy, but it was good, and refreshing, so it’s still a good go-to for lazy summer days.

The goods:

2 tomatoes, diced

1 cucumber, peeled and diced

1 small ball of fresh mozzarella, diced

extra virgin olive oil

salt

sliced italian bread, drizzled with oil and toasted

one or two cloves of fresh garlic, peeled

The method:

Mix your tomato, cucumber and mozzarella together.  Drizzle on some oil and sprinkle some salt to taste.  Set aside.

Drizzle your bread with oil and toast it until it’s golden brown.  Let it cool until you can touch it without burning yourself.

Rub the garlic over the bread.

Serve salad over bread.

Enjoy your effortless, healthy and easy dinner.
