This is great over grilled turkey, grilled pork, with chips, and with the shrimp salad mentioned in the previous post. =)

The Goods:
1 pineapple, peeled and cored
1 red bell pepper, ribs and seeds removed
1 anaheim pepper or 2 jalapeno peppers, ribs and seeds removed
1 red onion or 3 shallots, peeled
lime juice
sugar (optional)

Then method:
Finely dice everything. Seriously. The smaller and more even you can get it, the better.
Mix together your pineapple, peppers, and onion or shallot.
Add lime juice and a pinch of salt.
Taste it. My pineapple was a bit under-ripe so I added a couple pinches of sugar to bring out the sweetness of the fruit. Adjust seasonings according to taste.
