Continuing Val’s trend of easy meals – this one doesn’t quite qualify since I boiled the pasta separately, but it’s close.
The goods:
1/2 box rotini
about 8 oz cremini or button mushrooms, sliced ( I love cremini)
2 zucchini, peeled and sliced
1/4 red onion
1 can tuna, drained (chunk light works best)
1 package frozen artichokes, thawed and chopped
fresh grated parmesan
The Method:
boil the pasta. this should be self-explanatory.
meanwhile, get some olive oil (2 tablespoons or so?) heated up in a bigass skillet (nonstick is best)
toss in the onions and saute for about a minute until they start softening up
toss in the zucchini. keep everything moving.
after another minute toss in the mushroom, artichokes and tuna. you want to break up the tuna as much as you can.
Add assorted seasonings, to taste. I used adobo powder, oregano, and crushed red pepper.
When the veg are all cooked and soft, throw in the pasta and get everything mixed up really well.
plonk a serving into a bowl and sprinkle liberally with parmesan. Yum!
If you want, you can also add some chopped tomatoes towards the end – but be warned, this will make the dish quite a bit wetter.
